sweet and savoury culinary event of the fall season. It offers participants a chance to
experience everything cocoa products have to offer. Most importantly, all events will be
helping to raise awareness and funds in support of our mandated prostate and breast cancer
initiatives, as well as supporting SickKids through the Ava Rose Fund. We are thankful to
all the creative culinary and pastry chefs, the marvelous and ingenious chocolatiers and
many other generous food and service providers, who have stepped up to the plate to make
the Toronto Chocolate Festival grow year after year." |

La-Toya
Fagon
Twist Catering, Food Placement Director |

 |
With a passion for quality, healthy foods
and a long-standing family tradition of Caribbean Cuisine, it was the perfect marriage for
La-toya Fagon to pursue a career as a Chef. Interested in all aspects of the culinary
arts, La-toya has been driven to learn varying styles and techniques of cooking with
everyday ingredients and creating a masterpiece of global flavours from around the world.
In 2002, La-toya enrolled at George Brown College, specializing in
Culinary Management and Chef Training. Upon graduation, she apprenticed at various
boutique hotels and restaurants across the GTA. After gaining years of experience,
La-toya's creativity started to flourish and she crafted her own take on 'Island
Paradise', fusing her soul cooking style, with traditional Caribbean ingredients with
Western flavours. This created some new flavours, with some familiarity of home-style,
soulful goodness. Within months of experimentation, determination and hard work, La-toya
tapped into her entrepreneurial spirit and Twist Catering came to fruition.
quot;I love everything about food - the smells, the
flavours, the tastes, the texture and colours and mainly combining the raw essence of
ingredients and putting it together, creating an explosion of tastes on one's palate. As
my motto states its Culinary Simplicity with a Twist.
La-toya's current client portfolio includes
Loblaw's Canada, Benson & Hedges, MetroLabel, KarmaPRO Entertainment and Caribana festival to name a few. She's excited to be on board with The Chocolate Ball as their Food
Placement Director and eager with anticipation in creating some chocolate-infused
items and working with other talented chefs on board with this decadently delicious event.
